Artichoke and Chicken Sausage Cauliflower "Paella"

Ingredients :

  • 1 head cauliflower, broken into florets
  • 2 tablespoons warm water
  • half teaspoon saffron threads
  • 1/4 cup extra-virgin olive oil , divided

  • 1 big zucchini, chopped
  • 1 yellow onion, chopped
  • 1 carrot, grated
  • 2 cloves garlic, or extra to flavor, minced
  • 1/4 teaspoon floor cayenne pepper
  • 1 (15 ounce) can artichokes, tired
  • 3 cups bird stock
  • sea salt
  • half teaspoon freshly floor black pepper
  • 1 half cups snow peas

Instructions :

  • Place cauliflower florets in a meals processor; pulse into grains the dimensions of rice.
  • Combine hot water and saffron threads in a small bowl; allow stand for 3 mins to infuse.
  • Heat 2 tablespoons olive oil in a paella pan over medium heat. Add sausage; prepare dinner and stir until browned, about five minutes. Stir in zucchini and onion; cook for 3 mins. Add saffron infusion, carrot, garlic, and cayenne pepper; prepare dinner for 1 minute.
  • Stir cauliflower "rice" and artichokes into the pan. Cook and stir till slightly softened, approximately 3 minutes. Pour in stock; season with salt and pepper. Bring to a boil; lessen warmness and simmer until maximum of the inventory is absorbed, about 10 minutes. Stir in snow peas; simmer until all inventory is absorbed, 3 to 5 mins more.
  • Remove paella from the heat and drizzle ultimate 2 tablespoons olive oil on pinnacle.

Notes :

  • Substitute vegetable stock for the chook inventory if desired.
  • Use moderate or hot sausage as desired.
